From ancient grains to modern pizza, welcome to Emmer.
The Emmer name is their beginning: an ancient, organic heritage grain wheat, which is blended with rye and good Italian flour. These hand-selected grains are lower in gluten, and higher in nutrients like antioxidants, vitamins and minerals. Emmer doesn’t use them because they sound good, or just because they are good for you, they are chosen because they make every pizza naturally better, and naturally tastier.
Taste is at the heart of everything Emmer does.
And they take things slow to get the taste right, milling the grains by hand, then letting the dough ferment over two days to let the dough rise to something naturally light and naturally airy. Then, when the dough is ready, they speed things up: they bake every pizza in an iconic rotating steel oven; top them with a carefully balanced amount of ingredients to really focus the flavour. Not too many, not too few.
Fior di latte mozzarella. Organic basil and locally sourced herbs. Hand-sliced D.O.P. charcuterie. With a red sauce made only, and always, from the freshest Marzano tomatoes.
Then they slice. And they serve.
The final pizza is the perfect blend of chewy and crunchy. Light inside, with the just the right bite of crunch from the crust.
